Hey fellas! I have been chugging along on my new years resolutions over here, and just like everyone else ever one of my goals is to get a little healthier. I have made it a goal to work out once per week, and even though I have only gone to the gym twice this year so far (man that stings a lot more now that I’ve written it down) I felt a spontaneous surge of energy yesterday and decided to go for a bike ride. Mind you, I haven’t ridden a bike in at least a few months, and when I went and unlocked my bike there was a thick layer of dust that I had to wipe off the seat before beginning my rad workout journey. I wasn’t sure what to title these because I know that there are so many different names for the same bars: magic bards, hello dolly bars, and seven layer bars. But more than name confusion, I didn’t even know if I should call them by their original name because at this point they are WAY more than that. In addition to the traditional chocolate, pecans, coconut, and sweetened condensed milk, I packed in here some peanuts, almond slivers, pretzels, white chocolate chips, and caramel. PLUS, I exchanged the graham crust for a gluten free almond-date base.
But the real star here is the sweetened condensed coconut milk.
Did anyone else love malt-o-meal like it was candy when they were younger? Because I did. If my mama asked me what I wanted her to make me for breakfast, I would either tell her
- brown sugar oatmeal, or
That warm, creamy texture makes me all cuddly and fuzzy inside.
Even now, I find myself craving a bowl of creamy hot cereal when I wake up to a cold, rainy morning or when I’m feeling particularly under the weather. It is the ultimate comfort food for me.
Comfort foods are actually a thing I’m working on, because it seems like depending on foods for comfort can be a little bit dangerous, but in the meantime I suppose that this comfort food is not the worst for my health.
Unfortunately, I never ever remember to grab some malt-o-meal while I’m at the store, so over time I have found a simple, delicious, and accidentally gluten-free replacement for it using only one ingredient, oats, to replace the original wheat substance. I know that tomorrow is a celebratory time for many people, and I made a baked taco dip for all of my fellow taco-lovers out there to help with the festivities, but unfortunately in this time of celebration, my community is also enduring a time of healing from losing a beautiful soul yesterday morning.
I was not the closest I could have been to him, and I do not feel the pain of his loss as deeply as do some of my close friends, and so I hope to serve them in their healing process and to help him survive in their memories and in the love that the community is sharing for him. (more…)
