Gluten Free Malt-O-Meal (Vegan)

Did anyone else love malt-o-meal like it was candy when they were younger? Because I did. If my mama asked me what I wanted her to make me for breakfast, I would either tell her

  1. brown sugar oatmeal, or
  2. MALT-O-MEAL

That warm, creamy texture makes me all cuddly and fuzzy inside.

 

 

Even now, I find myself craving a bowl of creamy hot cereal when I wake up to a cold, rainy morning or when I’m feeling particularly under the weather. It is the ultimate comfort food for me.

Comfort foods are actually a thing I’m working on, because it seems like depending on foods for comfort can be a little bit dangerous, but in the meantime I suppose that this comfort food is not the worst for my health.

Unfortunately, I never ever remember to grab some malt-o-meal while I’m at the store, so over time I have found a simple, delicious, and accidentally gluten-free replacement for it using only one ingredient, oats, to replace the original wheat substance. Chocolate PB Banana Bread Muffins

Chocolate, peanut butter, banana bread, and muffins. I know there is a lot going on here, but this combo is actually perfect. The inspiration for this piece? I had three bananas that went black. So I sat down with my banana bread recipe and asked it what I could do to make it even more grand than it already is. It told me what I already knew deep inside of myself, “Add peanut butter or chocolate.”

Eight Smoothie Recipes You Haven’t Already Tried

How is everyone’s Veganuary going? We are wrapping the month up here, so I thought I’d give you some last-minute inspiration for if you need a little boost to get you back in the game. I remember that when I first went vegan, smoothies were the easiest and most delicious addition I made to my diet, but after a while it’s easy to run out of recipes. Vegan Jalapeño Poppers

Hello friends! We are getting close to Thanksgiving, and I am feeling so satisfied with my life.

I am thankful for my wonderful husband and our pets.

I am thankful for the loving support system that surrounds us, with our parents, siblings, grandparents, and so many parts of our family.

I am thankful for the abundant world in which we live and for all of the beautiful things that there are to see and experience on earth.
