I don’t know about you, but the best kind of meal is one that gives me an excuse to add gravy to it.
For example, the mashed potatoes that I have had as its own meal three times this week (so far). I’m showing you today my absolute favorite gravy recipes that I add to just about anything that I can, including mashed potatoes, roasted veggies, and everything served on a thanksgiving plate. Sure, it’s long past thanksgiving, but that doesn’t mean it’s ever a bad time to share a cool gravy tutorial.
When I wrote down my new years resolutions a few days ago, I omitted one of the most personal goals I have for this year: to improve and expand Enjoying Earth. I omitted this goal because it felt too scary to actually write it down where others could see and track my progress. Throughout the life of this blog, I have allowed the confines of my self-prescribed limits dictate how successful I can be and how much I am allowed to share here. I have let my self-conscious worries manifest in a barrier that I use to shield myself from others seeing those parts that worry me. Only recently have I realized (poo on that! I’m STILL realizing) that my barrier has surely kept out those who might judge me, but it has also detrimentally kept out those who might connect with me. (more…)
You have no idea how excited I am to share this recipe with you. I think that’s how I know for sure that I’m on the right path here with blogging, because I fricken love sharing recipes with you all.
The idea for the falafel burger came to me like most things: suddenly, when I wasn’t even thinking about food at all. My mind just whispered those two words together, “falafel burger,” and I responded aloud “YASSSS.”
I’m back in my nice safe home, and I had a wonderful time in the Philippines. I came back into town on June 8th, and work began for me the very next day, so honestly I have just been too exhausted to function for the last few days. I have been slowly catching up on my sleep, and I hope to eventually post a guide for traveling to a third world country as a vegan, but I cannot even think straight right now.
