3-Ingredient Gravy

I don’t know about you, but the best kind of meal is one that gives me an excuse to add gravy to it.

For example, the mashed potatoes that I have had as its own meal three times this week (so far). I’m showing you today my absolute favorite gravy recipes that I add to just about anything that I can, including mashed potatoes, roasted veggies, and everything served on a thanksgiving plate. Sure, it’s long past thanksgiving, but that doesn’t mean it’s ever a bad time to share a cool gravy tutorial.

Loaded Magic Bars (V + GF)

I wasn’t sure what to title these because I know that there are so many different names for the same bars: magic bards, hello dolly bars, and seven layer bars. But more than name confusion, I didn’t even know if I should call them by their original name because at this point they are WAY more than that. PLUS, I exchanged the graham crust for a gluten free almond-date base.

That warm, creamy texture makes me all cuddly and fuzzy inside.

Even now, I find myself craving a bowl of creamy hot cereal when I wake up to a cold, rainy morning or when I’m feeling particularly under the weather. It is the ultimate comfort food for me.

Comfort foods are actually a thing I’m working on, because it seems like depending on foods for comfort can be a little bit dangerous, but in the meantime I suppose that this comfort food is not the worst for my health.

Unfortunately, I never ever remember to grab some malt-o-meal while I’m at the store, so over time I have found a simple, delicious, and accidentally gluten-free replacement for it using only one ingredient, oats, to replace the original wheat substance. An even more not-the-worst-for-my-health alternative! (more…)

Chocolate PB Banana Bread Muffins

Chocolate, peanut butter, banana bread, and muffins. I know there is a lot going on here, but this combo is actually perfect. The inspiration for this piece? I had three bananas that went black. So I sat down with my banana bread recipe and asked it what I could do to make it even more grand than it already is. It told me what I already knew deep inside of myself, “Add peanut butter or chocolate.”
